Ingredients
  

  • 2 ripe bananas mashed
  • 1/2 cup granulated sugar or honey for a natural option
  • 1/4 cup melted butter or coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour or whole wheat for a healthier option
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts or chocolate chips optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease mini loaf pans.
  • In a bowl, mash the bananas and mix in sugar, melted butter, egg, and vanilla.
  • In another bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  • Gradually combine dry ingredients into the banana mixture, stirring until just combined.
  • Fold in walnuts or chocolate chips if using.
  • Divide batter evenly into mini loaf pans and bake for 22-25 minutes, or until a toothpick comes out clean.
  • Let cool for 10 minutes before removing from pans. Enjoy!

  • Can be made gluten-free by using a 1:1 gluten-free flour blend.
