  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large egg yolks
  • 1/2 cup Meyer lemon juice freshly squeezed
  • 1 tablespoon Meyer lemon zest
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract

Instructions
 

  • In a medium saucepan, whisk together sugar, cornstarch, and salt.
  • Gradually whisk in milk and egg yolks until smooth.
  • Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble.
  • Remove from heat and whisk in Meyer lemon juice, zest, butter, and vanilla.
  • Pour into serving dishes and refrigerate for at least 2 hours before serving.
