- 4 boneless skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup chicken broth or dry white wine
- 1 cup sun-dried tomatoes drained
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Fresh basil leaves for garnish
Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
Add minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until fragrant.
Pour in chicken broth or white wine, scraping the bottom of the skillet to deglaze.
Add sun-dried tomatoes and heavy cream. Bring to a simmer, then reduce heat and let the sauce thicken slightly, about 5-7 minutes.
Stir in Parmesan cheese until melted and smooth.
Return the chicken to the skillet. Spoon the sauce over the chicken.
Reduce heat to low and simmer for 5-10 minutes, or until the chicken is cooked through and the sauce has thickened. Garnish with fresh basil before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, gently warm on the stovetop or in the microwave. Add a splash of chicken broth or milk if the sauce has thickened too much.
- This dish can be frozen, without the basil. Freeze for up to 2 months.
