Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chicken broth or dry white wine
  • 1 cup sun-dried tomatoes drained
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions
 

  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  • Add minced garlic and red pepper flakes to the skillet. Sauté for about 1 minute until fragrant.
  • Pour in chicken broth or white wine, scraping the bottom of the skillet to deglaze.
  • Add sun-dried tomatoes and heavy cream. Bring to a simmer, then reduce heat and let the sauce thicken slightly, about 5-7 minutes.
  • Stir in Parmesan cheese until melted and smooth.
  • Return the chicken to the skillet. Spoon the sauce over the chicken.
  • Reduce heat to low and simmer for 5-10 minutes, or until the chicken is cooked through and the sauce has thickened. Garnish with fresh basil before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, gently warm on the stovetop or in the microwave. Add a splash of chicken broth or milk if the sauce has thickened too much.
  • This dish can be frozen, without the basil. Freeze for up to 2 months.
