Ingredients
  

  • 6-8 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions
 

  • Season the chicken thighs with salt and pepper. In a large skillet over medium-high heat, heat the olive oil.
  • Sear the chicken thighs for about 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds, until fragrant.
  • In a small bowl, whisk together the honey, soy sauce, and rice vinegar. Add the cornstarch and water, and whisk until smooth.
  • Pour the honey garlic sauce into the skillet and bring to a simmer, stirring constantly until the sauce thickens, about 1-2 minutes.
  • Return the chicken thighs to the skillet and coat them with the sauce. Cook for another 1-2 minutes, until heated through.
  • Garnish with chopped green onions and sesame seeds, if desired. Serve hot with rice or your favorite sides.

Notes

  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently.
  • Make-Ahead: The honey garlic sauce can be made a day ahead.
  • Freezing: Cooked chicken freezes well for up to 2 months.
