Ingredients

  • 1 large head of cauliflower cut into florets
  • 1/2 cup all-purpose flour
  • 1/2 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Buffalo hot sauce
  • 2 tablespoons melted butter or vegan butter
  • 1/2 cup ranch dressing for dipping

Instructions

  • Preheat oven to 425°F (220°C). In a large bowl, whisk together flour, water, garlic powder, paprika, salt, and pepper.
  • Dip cauliflower florets into the batter, ensuring they are fully coated. Place the coated florets on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, or until golden brown and tender.
  • In a separate bowl, whisk together Buffalo hot sauce and melted butter. Toss the baked cauliflower florets in the Buffalo sauce mixture.
  • Let cool slightly for 5 minutes. Serve warm with ranch dressing for dipping.

Notes

  • For a milder version, choose a less spicy buffalo sauce.
  • This recipe is easily vegan-friendly with plant-based butter and ranch.
  • Want more crunch? Roast at 450°F for the last 5 minutes.
  • Fresh cauliflower works best, but frozen can work if fully thawed and dried.
  • Store leftovers in an airtight container and reheat in the oven.
  • Add a squeeze of lime juice before serving for brightness.
